Creative Cupcake Recipe

My husband came up with this recipe by combining some other cupcake recipes, and I must admit that these were awesome.  It kind of negated our healthy veggie stir fry dinner, but these M&M muffins are awesome!

  •  2 cups flour
  • 1/3 cup sugar
  • 1/3 cup  packed brown sugar
  • pinch of salt
  • 2 teaspoons baking powder
  • 1  stick (1/2 cup) of melted butter
  • 2/3 cup milk
  • 2 eggs, slightly beaten
  • 1 teaspoon of vanilla
  • 3/4 bag of small baking M&M’s

Preheat the oven to 400* and place 12 muffin liners in your muffin tin.  In a large bowl, combine all the dry ingredients and stir to combine.  In a seperate bowl combine the butter, milk, egg, and vanilla.  Create a well in the dry bowl, and pour the wet ingredients into it.  Stir until mixed.  Stir in the M&M’s and pour by the spoonful into the muffin liners.

Bake at 400* for 20-25 minutes or until a toothpick inserted into the middle comes out clean.  Remove the muffin tin and let cool on a rack for 5 minutes.  Remove from the tin and let it completely cool (or eat it warm with a little bit of butter). :)

Just so you know, these freeze really good.
