Happy Soup
I’ve been asked a few times what Happy Soup is, so I thought I’d better take the time and write up the recipe. 
Sorry it took so long!
Happy Soup
- 1 large can of chicken broth
- pinch of red pepper flakes
- pinch of dried basil
- 1 can kidney beans
- 1 package of cheese filled tortellini
- 1 can of corn
- 2 tablespoons of grated Parmesean cheese
1. Boil chicken broth and add spices for flavor.
2. Add tortellini noodles until tender.
3. Add beans and cheese and simmer for 5 minutes.
4. Finally add the corn and simmer for 1-2 minutes until corn is heated through.
that soup would make me very happy! It’s funny, I was just telling my husband that we should add the cheese tortellini we were eating to a soup! I can’t wait to make this, thanks for the recipe!
It does sound like a fun soup. When you posted this recipe back in May (around Mother’s Day, I think), it reminded me how much we like corn in our soups! It reminded me to start adding corn again, since I had some in the freezer.

Jenny ~ I would have never thought of putting those noodles in soup on my own, but I’m glad I tried this recipe because I sure do like it. It’s really easy and it tastes good too.
