Happy Soup

I’ve been asked a few times what Happy Soup is, so I thought I’d better take the time and write up the recipe. :)   Sorry it took so long!

Happy Soup

  • 1 large can of chicken broth
  • pinch of red pepper flakes
  • pinch of dried basil
  • 1 can kidney beans
  • 1 package of cheese filled tortellini
  • 1 can of corn
  • 2 tablespoons of grated Parmesean cheese

1.  Boil chicken broth and add spices for flavor.

2.  Add tortellini noodles until tender.

3.  Add beans and cheese and simmer for  5 minutes.

4.  Finally add the corn and simmer for 1-2 minutes until corn is heated through.

    that soup would make me very happy! It’s funny, I was just telling my husband that we should add the cheese tortellini we were eating to a soup! I can’t wait to make this, thanks for the recipe!

    It does sound like a fun soup. When you posted this recipe back in May (around Mother’s Day, I think), it reminded me how much we like corn in our soups! It reminded me to start adding corn again, since I had some in the freezer.

    Jenny ~ I would have never thought of putting those noodles in soup on my own, but I’m glad I tried this recipe because I sure do like it. It’s really easy and it tastes good too. :) Let me know if you try it.

    Michele ~ Yeah I had posted it in the comments before, I think and some people missed it. I figured I would just make the recipe its own post – it’s deserving enough. :) What’s your favorite soup to make?

    Hmm.. a favorite? Probably minestrone. It seems to be my fall back recipe when we have company. :)
