Menu Plan Monday

Last week our biggest hit was the southwestern 5 layer salad, which we made with the chips on the bottom and layered like nachos.  Oh my good golly grief!  We stuffed ourselves and enjoyed them for lunch again the following day!

Monday ~ My mom made us pigs in a blanket (ours are the cabbage roll kind with beef and rice in the middle).

Tuesday ~ Spinach bake with pumpkin muffins that I didn’t get to last week

Wednesday ~ Beef chowder with homemade bread

Thursday ~ Leftovers

Friday ~ DH will be out of town and I’m hosting a Jr. High Dance with my cheerleaders, so eating something simple like grilled cheese and soup before I go.

Saturday ~ My baby shower and I’ll be eating leftovers from the shower.

Sunday ~  Egg salad sandwiches, veggies and dip, and sweet tea

Stepping Lightly v4.0

 As many of you remember, that I started blogging about living simply and stepping lightly after seeing the phrase over and over again.  But the real kicker was when I heard from one of Eckhart Tolle’s group to Step Lightly and to not walk with any burdens.  That put me over the edge.  That made my heart ache for a change.

Soon after, I found myself at St. Vinnie’s digging through the bookshelves (as I usually do).  I have been trying to manifest my own copy of Walden so I was glancing, hoping that I would find that buried somewhere among the books.  No such luck that day, but I came upon another treasure that I would soon find would continue to send me on the simple path and learn more about it and myself.

As I started reading Living Simply with Children, I began to question mine and DH’s life now.  What surrounds us?  What do we need to raise a child?  How will I handle things when my family thinks that I’m being cheap, or picky, or even that I may be neglecting my child of some of the things we choose?  But as I was reading it, I came across one of many book recommendations – Stepping Lightly! I didn’t even realize there was such a book!

On my quest to get it from the library and their sources that they can get an interlibrary loan from, I was at a stalemate.  I didn’t want to buy it since I felt that it would be another thing to take up space, but I decided buying it used from Amazon would be okay.  If it was a book that I wanted to pass along, I could donate it or sell it to the used bookstore in town afterwards.  After starting it though, I may just keep it as a reference.  I have a few things dogeared and highlighted already.

Some of my things I’d like to come back to are:

 

  • Simplicity Website
  • This question ~ “How much does the acquisition of this new thing add to my innate capacity to experience richness in life, and of what costs to the environment and to those I love and care for?”
  • This quote ~ “We seem obsessed with filling the void instead of simply being in it.”

This book has brought me back to Tolle and has helped me realize that their philosophies aren’t on totally different ends of the spectrum, but these philosophies move together toward a simple life.  They both speak of being present in the moment, and that we can simply live when we aren’t numbed by the constant chatter of technology, jobs we aren’t happy in, and going going going without slowing down to pay attention to our breath and the beauty around us.

Reading Stepping Lightly has also already shared another book recommendation.  This is a book that was recommended to me about a year ago, and I bought it used off of Amazon and stuck it on my “to read” shelf.  It’s been sitting there ever since, but I have gotten my push from the Universe.  My next book will be Your Money or Your Life. :)

Homemade Tortilla Recipe

As I move toward a more simple life, my goal is start learning how to make my own things and especially starting in the kitchen.  As I made my grocery list this past week, I knew that others made their own tortillas.  Why can’t (shouldn’t) I do that too?!  I didn’t put tortillas on my list, and I made them two nights ago before I went to bed.  There was enough there for my pinto bean tacos, breakfast burritos for this morning, and pb&j “sandwiches” for lunch.

I used the recipe from Hillbilly Housewife.

Ingredients:

 

  • 4 cups whole wheat flour or half wheat and half white

  • 1/2 teaspoons salt
  • 1-1/2 teaspoons baking powder
  • 1/4 cup vegetable shortening
  • 1 to 1-1/4 cups water

Directions:

 

  • Combine dry ingredients in a big bowl.
  • Cut in shortening with a fork.
  • Add water and make dough into a ball.  Knead about 20 times and then let sit for 10 minutes.
  • Split dough into 12 equal balls and roll into tortillas.
  • Heat skillet or pan – I put mine on medium heat (don’t add oil).
  • Put in tortilla and cook about 30 seconds on each side.

Garden Pizza Recipe

 

We love pizza around here, but my usual cheese pizza biscuits were getting a little old.  I ran across a garden pizza recipe, and I just had to try it.  It turned out really yummy, and we’ll be eating leftovers for lunch today.  I think next time I’ll add green peppers, or garlic, or crushed red pepper before eating because it was  missing the “zing.”

 Ingredients:

  • 1 tbs. olive oil
  • 1 1/2 cups shredded carrots
  • sliced mushrooms
  • 1 c. marinara sauce
  • 5-6 oz. of spinach
  • 1 1/4 cup mozzarella cheese
  • pizza dough (I used the biscuits, but pressed them together to make a pizza pie)

Directions:

  1. Preheat oven to 450*.  Grease pan with oil.
  2. Heat 1 teaspoon oil in skillet.  Add carrots and cook 6 minutes.  Stir in marinara sauce, mushrooms, 1/4 t. salt, and 1/8 t. pepper, and cook 3 minutes.  Add spinach and cook covered for 1-2 minutes.
  3. Pat dough into pan.  Spoon vegetable mixture on top, then add cheese to top.
  4. Bake for 15-20 minutes until bubbly and golden.

Stepping Lightly v3.0

 Stepping Lightly is not always about going down the easiest path you see ahead – it could mean making a choice that will have some steep hills and lots of mud to walk through for the sake of making your life better.

I have found that these past few weeks, I have really began to question the things around me and how I spend my time.  Maybe there are small amounts of action going on visibly from the outside, but my mind is reeling with questions about which path to take on so many different issues.

First and foremost, I have began questioning the things that I buy.  Usually it’s not until I get them at home and think, “Oh man.. I didn’t need this.”  But that thought will be come an action next time.  For example, I got a baby gift in the mail from an Aunt from Babies R Us.  I opened it, and it was the baby monitor I had put on my list.  After showing it to James, we both had a lightbulb go on saying, “Now was this necessary?!  For $35 and all that plastic!”  That might not have been the best thing on our registry – we will hear our baby cry, she will be safe where she is sleeping, and we both think it may have been excessive.

Beyond our purchases, we have began questioning how we spend our time.  On and off this week, I will be using a chart from Living Simply With Children to fill in exactly how I have spent my day.  It is amazing to me how much time I use the internet.  I knew it was a lot, but I never realized it was that much. 

First the thought, next the action.  Some of these actions aren’t clear to me yet, so I am still standing at the fork in the road and believing that I will make the best choice to continue on my Stepping Lightly path.

Monthly Grocery List

Since we live in a small town and it’s hard to find organic products (or products for a reasonable price), we travel about 60 miles once a month to go to an employee owned grocery store.  We have a lot of options there, and we find the things that we like (organic foods/produce, organic beauty supplies, fair trade goods..) and we save money.

As per request, I will be sharing my monthly grocery shopping list with you this month.  I do have quite a lot of things in my pantry, and I did just stock up snack foods, cereal, and some fruit a few days ago.  We also buy all of our meat in bulk from my brother who is a local farmer, so those purchases are not included.  The first thing I do is make a list of meals that I will make for dinner, and the I create a list with my stack of recipes.  I separate my list into categories and in the order that I walk through the store.

This is what works for me.  How do you grocery shop?

Reiki Self-Treatment 2

This morning I woke up with a headache and thought that I really should do another reiki treatment on myself.  Read about my first one here, or about reiki and how I began practicing.

I went into our library and turned on a classical music cd called New Morning, and I laid down on my bed on my left side.  Since my head hurt, I knew right where to start this session.  I asked for guidance and I began giving myself energy on my forehead.  I was drawn to stay there quite some time before I felt like I should put my other hand on the back of my head, near the top of my neck.  My hands felt really hot at this point and my jaw started to shake a little.  I made a conscious awareness to relax the muscles in my neck and face and the pain seemed to start to dissapate.

Once, I felt the urge to I put one hand on my heart and kept my one hand on my head.  This is where I began having a hard time concentrating and felt like I had a lot of fleeting thoughts, so with my eyes closed I began to visualize white light energy coming from my hands to my body.  I wanted to stay connected to the experience.

I then felt the need to put  my right hand on my belly and keep my left hand on my chest.  Almost immediately as I touched my growing stomach, little Sprout kicked my hand.  I hope she likes reiki. :)   As my hand was on my stomach, I soon remembered some of the issues I was having yesterday – some sharp pains (round ligament pains, I believe), sore stomach, and digestion problems.  Hopefully the reiki I did do will help with that as well.

Cheap Maternity Clothes

 

Have you ever noticed how expensive maternity clothes are?!  They are pretty outrageously priced, and I can understand why so many people have 1 or 2 pairs of maternity pants and a few shirts that they mix and match.  Maternity clothes are enough to break a budget, especially these days!

So I have treated myself to a few new things (mostly because I had a gift card or they were on extreme sales), but I have really been into thrifting for my clothes.  Since I am fairly small, I can get away with moving up sizes of regular pants or tops which is exactly what I did when I was stocking up on sweaters.  I made sure I bought styles that were long and stretchy and a size bigger.  For $11 at St. Vincent de Paul’s, I got 6 winter sweaters and I think all but one will fit until I give birth.

I don’t shop at Goodwill as much, but my mom, sister, and I happened to go there on our day out on Monday.  They actually had a maternity section, although there wasn’t much to choose from, I did find a few things in my size.  I got a  pair of maternity jeans for $3.99 and I found a maternity dress (that I will probably wear to my shower) for $6.99.  As I tried on the dress though, I realized there was a hole in it so I asked the cashier if they gave discounts for that sort of thing.  She gave me 25% off!

I spent about $20 at the thrift stores, but I think I am all set with my maternity clothes!  For more frugal ideas, visit Biblical Womanhood.
