Meal Plan Monday

We did much better getting through our meals this week.  I had changed a couple meals in order to use up some ground beef or to have an easier cooking night, so you may see some duplicates because of that.  I swear I will make that stew tomorrow since it’s been on my list for weeks.  The meat is thawing, so I can’t forget this time. :)

Monday ~ Beef stew in the crockpot

Tuesday ~ Tomato, egg, rice (like my friend Tracy used to make) with crab rangoons

Wednesday ~ Rice and bean soup with homemade bread

Thursday ~ Pizza biscuits with veggies for dipping

Friday ~ Having my parents over for steaks, mashed potatoes, and green beans

Saturday ~ Hamburger helper with leftover homemade bread

Sunday ~ Leftovers or out to eat

    Tomato egg & rice sounds interesting. Do you chop the first two and layer it on the rice?

    Allie ~ Thanks! You too! :)

    Suzie ~ I make scrambled eggs first and set them aside. Then I stir fry one chopped tomato with a couple cloves of garlic in olive oil. Once it is cooked, I add the egg back in with cooked rice and soy sauce. Mix until heated through. Season with salt. Enjoy! :)

    Great looking menu! I love soup, I’ll have to try the Rice & Bean Soup. It is pretty cold up here so I’ll have to add it to my menu soon!
