I grew up in Minnesota, the oldest of 3 girls. My dad is an entrepreneur and it sort of rubbed off on me–I like the lots-of-work of starting a business versus working for someone else and trying to keep up to someone else’s standards.

When I was 18 I started having skin issues–a sign of detoxification–and I became very interested in healthy eating. I was very self-conscious about my skin, and slightly bitter because while I was concerned about what I ate, it seemed that all the other people who ate junk didn’t suffer. But everyone has their own constitution, and mine was sensitive to sugar, pasteurized dairy products, chemicals, etc. In a way i feel lucky because if I didn’t have sensitivity to the foods I ate back then, where would I be today?

I went to University for sociology and art (double major), graduated in 2003 and married Elav. We moved to Southern Illinois a week after we got married. With my degree, I had the limited choices of a) going for my masters or b) getting whatever job I could find, not in my field. I chose B because Elav was in school. I worked at a bank for 1 year and 8 months. The women and men I worked with ate McD’s, Burger King, and other fast food for lunch every day. And  almost every day they would complain about bloated stomachs, gas, or other gastrointestinal issues. I ate food I brought from home: full fat, animal protein, healthy vegetables and didn’t have health complaints. They kept eating their fast food, and I was an abnormality. I didn’t make many friends there :)
I was interested in health, but it wasn’t until 2009 when I went to my first Wise Traditions Conference in Chicago, IL that the light turned on and I knew I needed to teach health, not just live it. Wise Trad is 3 days of speakers, amazing food, vendors where you can buy raw milk, kombucha, ghee, cod liver oil, wild caught salmon and lots of other foods (usually at discount because of the convention). It’s all in 1 hotel so you sleep, eat, learn and do everything in the same place–no driving. It’s a whole convention where everyone was LIKE ME! I went to my 2nd one near Philidelphia in 2010 and shortly afterwards I started writing my blog (started out with realfoodbybeck.blogspot.com). I took a course through kevin brown (liberation wellness) that certified me as a health and wellness instructor. THat was enough to get doing health coaching, but I feel I need more.
This fall I plan to begin another program that will give me more hands-on holistic practice, I will be able to do more hands-on health coaching. (There are a couple distance-learning programs I’m looking at.)
I hear you are hosting a challenge on your blog – tell us about it.  Why should we join?
Yes, I’m hosting a challenge. Most challenges are about doing something, whereas mine is about not doing something. Drinking coffee, specifically. I always wanted to drink coffee; it was a grown-up thing to do. When I was 16, mom decided I was “legal” and took me out for a lattee at Lighthouse Coffee house in River Falls, WI (now has changed owners and is called The Dish and The Spoon Cafe). In college I drank whole pots of coffee during the day. I worked at the Whole Earth Grocery (a co-op) in River Falls and, as an employee, we could drink as much coffee as we wanted. I usually was nursing a warm cup every time I worked. The fact that it was always warm for a 6-8 hour shift should say something about how frequently I refilled.

So the challenge is a 28-day challenge. the goal (challenge) is to stay off coffee for 24 of those days. Seems pretty easy, right? I remember I went off coffee once and was a zombie for a week, I felt like I was viewing the world through a haze.

Why should you join? 
1. If you drink lots of coffee, have you ever tried to go off coffee? If no, you should join and test yourself. :)  

The goal of the challenge is not to go off coffee forever. The goal is to go off for 28 days–basically a short term detox from coffee. And during those 28 days, take note without judgement about what is happening in the body. 
Do you feel healthier? Cleaner? Grumpy? After the first week did waking up seem easier? Is it easier to fall asleep at night? Do you go to sleep earlier than usual? What about the 4 days you can drink coffee–do you have those specific dates planned out already? Are you looking forward to those 4 days even before you begin the challenge? Are those 4 days less important as the challenge gets underway? Do you “binge” on coffee during those 4 days or do you seem to enjoy each cup more than before? Is the craving for coffee more psychological or physical do you think?

What motivated you to have a coffee challenge?
I started thinking about having a challenge after Cheeseslave started the Kettlebell Challenge. I wanted to do something that would actually be a challenge. The thought of going off coffee (since that first attempt) came to me, and my heart nearly stopped. And I thought, “No. I can’t do that.” That’s when I decided to do it: it was the fact that I don’t want to do it that prompted me to write the challenge.

If something is that scary to quit (even temporarily!) why not try?
Are there any benefits to coffee?  
Some studies have shown positive effects of minimal coffee consumption: reduces the likelihood of developing Alzheimer’s disease and dementia later in life. The Pioneer Press ran an article about a study showing that women who drink coffee are less likely to be depressed.
What are the negative effects of it?
Some people are more sensitive to the effects of caffeine than others. Caffeine is a contributing factor to insomnia, anxiety, irritability and stomach problems. 

When a body consumes caffeine, the neurons in the brain start firing triggering the pituitary gland to secrete a hormone that tells the adrenals to produce adrenaline. Adrenaline is that rush athletes feel during a race or crossing the finish line, that rush that give you the courage to jump out of a perfectly fine airplane to skydive, the rush that pushed our hunter-gatherer ancestors to run away or fight animals. It’s our “fight-or-flight” mechanism.

So caffeine is putting my body into “fight-or-flight” for normal every day things, like waking up this morning (actually that is a fight) and later this afternoon. :)

If this is prolonged, the adrenals become exhausted and just plum give out on us. (FYI, I’m currently readingThe Help.) For women, this is detrimental because we need those adrenals when our ovaries “pass the baton” (as Nora Gedgaudas says) during menopause.


Explain your perfect cuppa coffee…
Oh an easy question!! :) A light roast Guatemalan coffee fresh roasted from the Whole Earth Grocery with enough raw cream to change the color to a light brown.
Will you be replacing your coffee with something else?  What would you recommend to others taking this challenge?
I’ll be replacing coffee with Teeccino and Dandy Blend, which can give the same taste and consistency of coffee. Also, I’ll be drinking herbal teas.

I’d recommend to plan ahead. If you know you have an addiction, be ready to weather out the worst. Use the challenge to form a support group–maybe even invite a friend to join the challenge with you. And take note of what is happening in the body (questions from above).

Welcome to my Home Wednesday ~ Hooping

I was invited to a MOPs group yesterday to lead them through a hula hooping workshop.  How cool is that?!  I am not the best hooper – I just dabble, but it is so much fun.  Much more fun in the sunshine and barefoot in the grass so hopefully I can hoop with a growing belly.

Anyway!

The workshop was so much fun.  Why didn’t I go to MOPs before?!  All of the women are so nice and inviting and they seemed to have a good time building and decorating hoops.  The bad part, we ran out of time to actually hoop!  We are planning a playdate at the park when it’s warmer so we can hoop together.

Have you tried hooping as an adult?  Make your own hoop for cheap, don’t use your kids they are too light and small for us, and crank the music.  It’s such a playful exercise!

Welcome to my Home Wednesday ~ Family Herbalist Course

It has been over 3 years since I graduated college.  It’s been way longer than that since I have graduated high school.  But.. I am excited today because me and another friend are signing up for a class tonight.

Why does that make me so happy?!

I’m a life learner!  I can’t help but get excited about learning new things… especially with someone as interested in these things as I am.  So, what class is it you ask?

It’s a Family Herbalist Course through one of the founders of the American Herbalists Guild.  I am taking the course so that I can learn more about the history of the use of herbals, how to grow them, harvest them, and use them for myself and family and friends as a form of preventative medicine.

We would love more people in our study group!  Let me know if you are interested! :)

Welcome to my Home Wednesday ~ Friends and Family

This past week, we spent a lot of time with friends because James was out of town for business.  It makes me feel so good to know that I am surrounded by such great friends and family and little companions for Val.

We had a potluck at our house for mamas and kiddos.  The kids had so much fun running around and playing that only a few of them actually sat down to eat.  The mamas had a time to connect and that is ALWAYS nice!

We spent the end of last week at the library story time, music class, and playgroup meeting new friends and seeing our favorite “teachers.”  I’m loving this routine and Val seems to enjoy herself with the new toys and friends each week.

Over the weekend, I got to babysit for a friend’s little ones so we had a full house!  Four babes ages 3 and under – including just a wee little one.  I got to snuggle, and Val got to play with a bunch of kids her own age.  And we also went to a playoff game at my brother’s house, where we spent time with family yelling for the Packers! :)  Val got to play with her cousins – she even dressed up for a masquerade ball.

I hope your week was filled with friends and family too!

Letting Go of 11 Things in 2011

I’m a little late to this Reverb10 thing, but I stumbled on it this morning after some yoga.  I had my tea in hand.  I thought, “Why not?”  I dusted off the journal and started.

11 Things. What are 11 things your life doesn’t need in 2011?

1.  Expectations of others. Normally if I expect things of others, either behaviors, things, actions, in some way they will fall through.  Now I’m not trying to be negative, but my general idea of them or what they said they would do is just that – an idea.  Humans can communicate, but I think we are generally bad at conveying our thoughts with others.  This makes for mixed communication and a confusion in expectations.  I want to focus on the positives they do bring to my life.

2.  Worry. As I have heard, it’s just a bunch of meandering thoughts whirling around a pit of fear.  It does no good.  I want to do something in its place and find solutions or let it go.

3.  Procrastination and laziness. Now I understand that there are times needed for rest, but I know I deliberately cut corners sometimes out of laziness.  I want to feel accomplished instead.

4.  The idea that material things makes me who I am. I am me because of my thoughts, my life experiences, and the people I surround myself with.  I can still be me without the stuff.

5.  Excuses! They are just that excuses!  They do nothing positive for my life, and I want to experience more without being tied to limits.

6.  Negative thoughts and speech. I want to enjoy my days in reality and in my thoughts, and I want to pass those traits along to my daughter.  I don’t want to be and I don’t want her consumed by negativity.

7.  Labels. I want to parent, teach, live, learn, experience without labels.  They may help us find community, but I am seeing a lot more people fighting with others or with themselves over expectations because they are trying to live up to a label.

8.  Attachment to technology. I love gadgets and the online community, but sometimes I just feel stuck in it rather than really living and doing offline.  I want to find a balance.  Expect more on this one later. :)

9.  The clock.  Some days, I go mad because Val hasn’t napped by 1pm.  Why?  Because the clock told me she should be napping RIGHT NOW.  That creates a downward spiral, and it’s unnecessary.  I want to follow the rhythm of the day and just flow.

10.  Feeling obligated.  Either do it or don’t do it and stick with the decision.

11.  Envy. I’m human – I get jealous of other people’s things or situations or their time spent doing things like meditating or doing yoga.  I want to be grateful in all the little moments because this is my life, and I’m totally going to enjoy it in 2011.

My Love List

Beth shared her List of Love yesterday, and I am feeling inspired to do the same.  Sometimes we just need to fill up our hearts with gladness and share it with others so they may do the same.  She did that for me, and hopefully I can also do that for one of you. <3

::My Love List::

  1. Spending a morning with my sister, mom, niece, and nephew.  We had some inside jokes – “We didn’t do it, I swear!”  But most of all, I got to see my daughter connect with my niece on a totally new level.  They were holding hands, having toddler conversations together, and finishing each other’s sentences.  One would say, “Ho Ho Ho!”  The other would respond, “Merry Christmas!”  My heart is overflowing.
  2. Having a freezer full of food and some things stored for the winter.  Diced tomatoes and frozen corn from the garden.  Homemade ketchup and pickles.  Frozen venison that we just started processing ourself.
  3. Distance Reiki sessions are so fulfilling.  That connection and giving relaxation for only 15 minutes is so lovely.
  4. My husband who still loves me after all these years.  Even when my hair’s a mess, I’m wearing a robe, and reading storybook after storybook instead of making him breakfast on time. :P
  5. Good, homemade food.  There’s no description needed here.  It’s just food for the soul.
  6. A good cuppa coffee or tea is just as good for my soul.
  7. Spending time with friends talking about life, books, marriage, kids… I always need a refreshing morning like that.
  8. Fellow mamas and friends who support my parenting choices and getting sweet notes via Facebook about it.  Little reminders about how following your heart is so totally right.
  9. Getting things in the mail!  I can’t wait for Christmas cards to start flowing in. :)
  10. Christmas music, Christmas lights, Christmas decorations….. need I say more?

Sunday Inspiration

This past week a package arrived on my door step, and in it was a running t-shirt rocking out the NAUGHTY DINGOS!  The Naughty Dingos are a group of women all striving for health in their life through many things, but one common thread – running.

There are doctors, geologists, professors, stay-at-home mamas, mamas who make soaps, homesteaders, and many have other passions too like biking, cross-country skiing, or yoga.  These women inspire me because they have jobs, and families, and they still take care of their bodies and are role models for their children.

The Naughty Dingos sent me a shirt because someone sponsored me, and they sent me a shirt after I had been MIA from the group for a month or two.  These connections online that some people believe are superficial – I can attest can be SO real!  They are my inspiration and my counsel, and I love them and am thankful for their presence in my life.

Sunday Inspiration ~ Baby Laughs and Louder than Words

This week, I took a break from my usually scheduled reading of The Fountainhead (which is taking me forever by the way).  I borrowed a couple of books from a friend and just devoured them!  Now, you may be surprised to hear I was inspired by this author (or not depending on what you think of me :P ) but these books were a great reprieve from the slow moving book I had been reading.

The first was Belly Laughs by Jenny McCarthy, and I’m not quite sure why I didn’t read this sooner after having Val.  With her humor and crass way of telling it like it is, I may have felt a little bit better having a little one in the house.  All the crazy stuff was totally normal and maybe I could have laughed a little more.  It’s a quick read.  Even with a toddler, I finished it in a day.

The second book was also by Jenny McCarthy, but a little bit deeper than the first one.  It’s called Louder Than Words – A Mother’s Journey in Healing Autism.  I know some people think that Jenny isn’t qualified to talk about autism and how to heal or what might cause it.  I am a firm believer in a mother’s instinct, in healing with diet, and not so much of a believer of the medical field sometimes.  She doesn’t know or claim to know exactly what caused her son’s autism, but she does know what actions she took to bring him out of his window and she’s sharing that information.  I am not a mother of a child with autism, but I would recommend this book to one so they would start asking questions.

Welcome to my Home Wednesday ~ Sold and making new friends

Welcome to my home!  This one… the one I may only be living in for a little over a month because we signed sale papers on Saturday!  We had an inspection today, so pending anything major IT’S SOLD!  Whoa!

Expect a few changes in my “Welcome to my Home Wednesday” posts from now on.  Like, where we’ll be living for one!!!  We’ll keep you posted as we go along. :)

You know one really cool thing I did this past week? I met up with a Twitter friend to have coffee.  She is from nearby, she blogs, she is fostering a LO (a very cute LO), and she’s lovely.  I am so glad to have made the connection!

NaBloPoMo & Good friends

In honor of National Blog Post Month (aka NaBloPoMo), I will be posting an update daily here on the blog.  I know, I know, I’m a little late.  Better late than never though!

I spent my evening with friends… friends that I have had for AGES!  We’ve lived through Girl Scouts, elementary school, middle school, cheerleading, high school, boyfriends, breakups, prom court, college, jobs, and now we are on to babies and raising kids.

I am refreshed after time with the girls.  I feel like a few hours can recharge me and make me a better wife and a mother.  So we take breaks from our homes, children, and husbands to be together again and chat about food, family, books, and whatever else we think about while we can speak in full sentences. :)

Tonight we went to a new dinner in town hosted by a favorite restaurant.
